Why End Grain?
The majority of wood cutting boards you can buy today are edge grain design. The main reason for this is that they are significantly easier to manufacture, there are twice as many construction steps in the construction of an end-grain cutting board. The old fashioned cutting boards were always end grain design (the chopping block) for a reason, it keeps the knives much sharper. Instead of crushing against the wood fibers the blade goes between them much like cutting into a firm brush. You will find that your blade edges last much longer, and you'll see no knife marks on the board. End Grain construction is often shied away from by manufacturer's, often to the customer's disservice. Hundreds of years of history proves that end grain is the premium chopping and food preparation surface. Edge grain is a modern surface for butcherblock, designed and developed only the last 50 years in the industrial age of streamlined manufacturing. It just didn't exist before the 1950's the adhesives were not good enough.

Did you know that wood cutting boards are the safer to use than plastic? Bacteria have a tougher time surviving on wood boards. Research has shown that bacteria, such as the salmonella often found on raw chicken, will thrive and multiply if not removed from plastic boards. On wood boards, whether they are new or have been used for years, the bacteria dies off within 3 minutes. Researchers theorize that the porous surface of the wood surface of the wooden boards deprives the bacteria of water, causing them to die. You should always be cautious, scrub your board clean with soapy water and a small amount of bleach after using with dangerous foods such as raw meat and recoat on occasion with a light covering of mineral oil after cleaning to maintain a lustrous look. Once cutting boards (plastic and wood) become excessively worn or develop hard-to-clean grooves, they should be discarded. All of our cutting boards use FDA approved glues and and are hand rubbed with mineral oil to assure that no unsafe chemicals are used in the construction of your cutting boards.
